The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Blue Insulation Armour™. It has a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet can hold either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans. It has 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It is available in both high wattage and low wattage models. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology retains heat, saves energy, and keeps the exterior cool to touch. It is available in Red, Blue, or Gray standard colors, with other colors available upon request. The cabinet can be equipped with either solid insulated aluminum doors or clear polycarbonate doors. The clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options. The cabinet is made of High Density Polyethylene (HDPE) for insulation, with a smooth polymer drip trough and catch pan. It has high-temperature Santoprene gaskets, molded hand holds, polymer magnetic pull latch, and double hinged, reversible doors. The clear doors have an aluminum frame and polycarbonate window, while the solid doors are fully insulated with fiberglass and aluminum. The casters have neoprene wheels and ball bearings.
