The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with Blue Insulation Armour™. It features Dutch insulated aluminum doors and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (18) 18" x 26" pans or (34) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery through a thermostatically controlled, forced convection system, and a choice of Red, Blue, or Gray Insulation Armour™. The Insulation Armour™ is made of durable polymer construction that is dent, impact, and stain resistant. It also has molded-in hand holds for easy mobility.
The cabinet is available with either solid insulated aluminum doors or clear polycarbonate doors. Full Height cabinets can be configured with full length or dutch-style doors. Clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Heated Holding & Proofing Cabinet also offers various options and accessories such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, straight plugs in different amperages, and chrome universal slide pairs.
