The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with grey insulation Armour™. It features Dutch insulated aluminum doors and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has fixed wire slides on 3" centers, with a capacity to hold either 18" x 26" pans or 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph, with a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet has several standard features, including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, and reliability and durability built into its design. It also provides fast heat-up and recovery through a thermostatically controlled, forced convection system. The insulation Armour™ is available in red, blue, or gray, and is designed to retain heat, save energy, and provide a cool-to-touch exterior. The cabinet can be configured with solid insulated aluminum or clear polycarbonate doors, with the option for full-length or Dutch-style doors. The control module is removable without tools and features an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights.
There are several options and accessories available for the cabinet, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options. The specifications of the cabinet include high-density polyethylene insulation Armour™, a smooth polymer drip trough with catch pan, high-temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, and either clear or solid doors. The casters are nickel plated and have donut neoprene wheels, with two of them having brakes.
