The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, full-height cabinet with grey insulation Armour™. It features Dutch clear polycarbonate doors and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has fixed wire slides on 3" centers, with a capacity to hold either 18" x 26" pans or 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the insulation Armour™.
The cabinet is available with either solid insulated aluminum doors or clear polycarbonate doors. Full height cabinets can be configured with full length or Dutch-style doors. The clear doors provide visibility of the contents without losing heat.
The control module options include holding, moisture, and combination proof and hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The C5™ 3 Series Heated Holding & Proofing Cabinet offers various options and accessories, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of high-density polyethylene (HDPE) insulation Armour™ and features a smooth polymer drip trough with a catch pan. It has high-temperature, door-mounted Santoprene gaskets and molded hand holds on all four corners. The latches are polymer high-strength magnetic pull latches with lever-action release. The hinges are field reversible, double hinged, with a 180° swing and long-life nylon bearings.
