The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet is insulated with Blue Insulation Armour™, which is made of durable polymer and retains heat while providing a cool-to-touch exterior. The cabinet can hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans on fixed wire slides. It has 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers power options, with high wattage or low wattage models available based on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components that ensure a long life of worry-free use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ is available in Red, Blue, or Gray standard colors, with other colors available upon request. The cabinet doors can be solid insulated aluminum or clear polycarbonate. Full Height cabinets can be configured with full length or dutch-style doors. Clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) for insulation Armour™, with a smooth polymer drip trough and catch pan. It has high temperature, door mounted, Santoprene gaskets and molded hand holds on all four corners. The latches are polymer high-strength magnetic pull latches with lever-action release.
