The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, insulated cabinet with a clear polycarbonate door. It has a lower wattage option and features Red Insulation Armour™ for energy efficiency and a cool-to-touch exterior. The cabinet has a removable bottom mount control module with a thermostat that can reach up to 200°F. It has universal wire slides on 3" centers that can hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans. The cabinet is equipped with 5" casters, two of which have brakes. It is made of aluminum and operates on 120v/60/1-ph with 1440 watts and 12 amps. The cabinet is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability with high-quality components, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray Insulation Armour™, and the doors can be solid insulated aluminum or clear polycarbonate. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The cabinet also offers various options and accessories such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options. The specifications of the cabinet include High Density Polyethylene (HDPE) Insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, extruded aluminum powder coated frame with a polycarbonate window for clear doors, and fully insulated solid doors with fiberglass and aluminum panels.
