The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, insulated cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet can hold either 14 18" x 26" pans or 26 12" x 20" x 2-1/2" pans on fixed wire slides. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a wattage of 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option of high wattage or low wattage models depending on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The cabinet is available in Red, Blue, or Gray standard colors, with other colors available upon request. It features patented Insulation Armour™ technology, which retains heat, saves energy, and provides a cool-to-touch exterior. The insulation is made of durable polymer that is dent, impact, and stain resistant. Molded-in hand holds create vertical handles for easy mobility.
The cabinet offers the choice of solid insulated aluminum or clear polycarbonate doors. Full Height cabinets can be configured with full length or dutch-style doors. Clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) for insulation. It has a smooth polymer drip trough with a catch pan, high temperature Santoprene gaskets, and polymer high-strength magnetic pull latch with lever-action release.
