The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a removable bottom mount control module. It has a thermostat that can reach temperatures up to 200°F and can hold up to 27 18" x 26" pans on lip load slides. The cabinet is made of aluminum and has Red Insulation Armour™ for heat retention and energy savings. It has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option of high wattage or low wattage models depending on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ is available in Red, Blue, or Gray and is made of durable polymer that is dent, impact, and stain resistant. It has molded-in hand holds for easy mobility. The cabinet can be equipped with solid insulated aluminum or clear polycarbonate doors. The clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. They feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of High Density Polyethylene (HDPE) Insulation Armour™ and has a smooth polymer drip trough with a catch pan. It has high temperature, door mounted Santoprene gaskets and polymer high-strength magnetic pull latches with lever-action release. The hinges are field reversible, double hinged, and have a 180° swing with long-life nylon bearings. The clear doors have an extruded aluminum powder coated frame with a polycarbonate window.
