The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, 3/4 height cabinet with a grey Insulation Armour™. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet can hold up to 27 pans measuring 18" x 26" and is equipped with lip load slides on 1-1/2" centers. It has 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the C5™ 3 Series Heated Holding & Proofing Cabinet include three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, fast heat-up and recovery, and a choice of colors for the Insulation Armour™. The Insulation Armour™ is made of durable polymer construction that is dent, impact, and stain resistant. It also has molded-in hand holds for easy mobility.
The cabinet is available with either solid insulated aluminum or clear polycarbonate doors. Full Height cabinets can be configured with full length or dutch-style doors. The clear doors provide visibility of the contents without losing heat.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are also removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are several options and accessories available for the C5™ 3 Series Heated Holding & Proofing Cabinet, including a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
The specifications of the cabinet include High Density Polyethylene (HDPE) Insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, clear or solid doors with insulation, and four casters with donut neoprene wheels and brakes.
