The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, half-height insulated cabinet with a removable bottom mount control module. It has a thermostat that can reach up to 200°F and has moisture control. The cabinet can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet is 120v/60/1-ph and has a power of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet comes with three slide styles for maximum holding capacity: Universal Wire, Lip Load, or Fixed Wire. There are also options for high wattage or low wattage models depending on the specific needs of the application. The C5™ 3 Series is designed for reliability and durability, with high-quality components that provide a long life of worry-free use. It also offers fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology used in the cabinet retains heat, saves energy, and provides a cool-to-touch exterior. It is available in Red, Blue, or Gray standard colors, with other colors available upon request. The cabinet can be equipped with either solid insulated aluminum doors or clear polycarbonate doors. The clear doors provide visibility of the contents without the heat loss associated with opening the door.
The control module options include Holding, Moisture, and Combination Proof and Hold. All modules feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. They are also removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are various options and accessories available for the C5™ 3 Series, including a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
