The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with a removable bottom mount control module. It features a thermostat that can reach temperatures up to 200°F and has moisture control capabilities. The cabinet has universal wire slides on 3" centers that can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. It is made of aluminum and has Blue Insulation Armour™ for insulation. The cabinet is equipped with 5" casters, two of which have brakes. It operates on 120v/60/1-ph and has a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet comes with several standard features including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery. The Insulation Armour™ technology retains heat, saves energy, and provides a cool-to-touch exterior. The cabinet is available in Red, Blue, or Gray standard colors, with other colors available upon request. The doors can be solid insulated aluminum or clear polycarbonate, with full-length or dutch-style options for full-height cabinets. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are also several options and accessories available for the cabinet, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options. The specifications of the cabinet include High Density Polyethylene (HDPE) Insulation Armour™, a smooth polymer drip trough with catch pan, high temperature Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field reversible double hinged doors with long-life nylon bearings, clear or solid doors with aluminum or fiberglass insulation, and four casters with neoprene wheels and ball bearing swivels.
