The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with red Insulation Armour™. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans on fixed wire slides. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a power output of 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet has three slide styles to maximize holding capacity: Universal Wire, Lip Load, or Fixed Wire. It also offers the option of high wattage or low wattage models depending on specific needs. The C5™ 3 Series is designed for reliability and durability, with high-quality components for long-lasting use. It provides fast heat-up and recovery through a thermostatically controlled, forced convection system.
The Insulation Armour™ technology retains heat, saves energy, and keeps the exterior cool to touch. It is available in red, blue, or gray, with other colors available upon request. The cabinet can be equipped with solid insulated aluminum or clear polycarbonate doors. The control module options include Holding, Moisture, and Combination Proof and Hold, all featuring an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
Optional accessories include a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options. The cabinet is made of high-density polyethylene (HDPE) Insulation Armour™ and features a smooth polymer drip trough with a catch pan. It has high-temperature Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latch with lever-action release, and field reversible double hinged doors. The clear doors have an extruded aluminum frame with a polycarbonate window, while the solid doors are fully insulated with fiberglass and aluminum panels.
