The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with red Insulation Armour™. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to temperatures up to 200°F and also has moisture control. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The standard features of the cabinet include three slide styles for maximum holding capacity, the option to choose between high wattage or low wattage models, reliability and durability with high-quality components, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The Insulation Armour™ is available in red, blue, or gray and provides heat retention, energy savings, and a cool-to-touch exterior. The cabinet can be equipped with either solid insulated aluminum or clear polycarbonate doors, with full height cabinets having the option for full length or dutch-style doors. The control module options include holding, moisture, and combination proof and hold, all featuring an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The cabinet also offers various options and accessories such as a travel latch, 6" casters, small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, flush door latch, stainless steel universal slides, and different plug options.
