The C5™ 3 Series Moisture Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with red Insulation Armour™. It is insulated and has a clear polycarbonate door. The cabinet has a removable bottom mount control module with a thermostat that can reach up to 200°F and has moisture control. It has fixed wire slides on 3" centers, with a capacity of either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. The cabinet is equipped with 5" casters, two of which have brakes. It is made of aluminum and operates on 120v/60/1-ph, with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet has several standard features, including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The Insulation Armour™ is available in red, blue, or gray, and provides heat retention, energy savings, and a cool-to-touch exterior. The cabinet can be equipped with either solid insulated aluminum doors or clear polycarbonate doors, with the option for full length or dutch-style doors for full height cabinets. The control module options include holding, moisture, and combination proof and hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are also several options and accessories available for the cabinet, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, straight plugs in 20 Amp or 15 Amp, and chrome universal slide pairs.
The cabinet is made of high-density polyethylene (HDPE) Insulation Armour™ and has a smooth polymer drip trough with a catch pan.
