The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can reach temperatures up to 200°F. The cabinet can hold up to 17 pans measuring 18" x 26" and has lip load slides on 1-1/2" centers. It is made of aluminum and has 5" casters, two of which have brakes. The cabinet operates on 120v/60/1-ph and has a wattage of 1440 watts and 12 amps. It is cULus and NSF certified.
The cabinet comes with several standard features including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The cabinet is available in Red, Blue, or Gray insulation armor, which retains heat, saves energy, and provides a cool-to-touch exterior. The doors can be solid insulated aluminum or clear polycarbonate, with full height cabinets having the option for full length or dutch-style doors. The control module options include Holding, Moisture, and Combination Proof and Hold, all of which have an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
There are also several options and accessories available for the cabinet, including a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options.
The cabinet is made of high-density polyethylene (HDPE) insulation armor and has a smooth polymer drip trough with a catch pan. It has high-temperature, door-mounted Santoprene gaskets, molded hand holds on all four corners, polymer high-strength magnetic pull latches with lever-action release, and field reversible, double hinged, 180° swing hinges with long-life nylon bearings. The clear doors have an extruded aluminum powder coated frame with a polycarbonate window, while the solid doors are fully insulated with fiberglass and aluminum.
