The C5™ 3 Series Heated Holding & Proofing Cabinet is a mobile, half-height cabinet with blue insulation armor™. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 200°F. The cabinet has universal wire slides on 3" centers, adjustable on 1-1/2" increments, and can hold either (8) 18" x 26" pans or (16) 12" x 20" x 2-1/2" pans. It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with 2000 watts and 16.7 amps. It is cULus and NSF certified.
The cabinet has several standard features, including three slide styles for maximum holding capacity, the option to choose between high or low wattage models, reliability and durability with high-quality components, and fast heat-up and recovery through a thermostatically controlled, forced convection system. The insulation armor™ is available in red, blue, or gray and provides heat retention, energy savings, and a cool-to-touch exterior. The cabinet is available with either solid insulated aluminum or clear polycarbonate doors. The control module options include holding, moisture, and combination proof and hold, all of which feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The modules are removable without tools for easy cleaning and allow for future upgrades without replacing the entire cabinet body.
The cabinet also offers various options and accessories, such as a travel latch, 6" casters, a small item shelf, stainless steel legs, rear rigid casters, factory left-hand hinging, a flush door latch, stainless steel universal slides, and different plug options. The specifications of the cabinet include high-density polyethylene insulation armor™, a smooth polymer drip trough with catch pan, high-temperature door-mounted Santoprene gaskets, molded hand holds on all four corners, a polymer high-strength magnetic pull latch with lever-action release, field-reversible double hinged doors with long-life nylon bearings, extruded aluminum powder-coated frame with a polycarbonate window for clear doors, and fully insulated solid doors with fiberglass and aluminum panels.
