The C5™ 1 Series Proofing Cabinet is a mobile, full-height cabinet that is non-insulated. It features a clear polycarbonate door and a removable bottom mount control module. The thermostat can be set to a maximum temperature of 120°F. The cabinet has lip load slides on 1-1/2" centers, with a capacity to hold 35 pans measuring 18" x 26". It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph power, with a wattage of 1440 and an amperage of 12. It is certified by cULus and NSF.

There are three holding modules available: proofing module, holding module, and combination module. The proofing module is for proofing applications only and has individual analog controls for temperature and humidity levels. The holding module is for heated holding applications and features an analog temperature control and a passive humidity generation system. The combination module can switch between heated holding mode and proofing mode, with individual analog controls for temperature and humidity levels.
Optional accessories for the C5™ 1 Series Proofing Cabinet include a travel latch, 6" casters, small item shelf, rear push handle, stainless steel legs, factory left-hand hinging, rear rigid casters, perimeter bumper, flush door latch, stainless steel universal slides, straight plug (20 Amp or 15 Amp), and chrome universal slide pair.
