The C5™ 1 Series Proofing Cabinet is a mobile, non-insulated cabinet with a clear polycarbonate door. It has a removable bottom mount control module and a thermostat that can be set to a maximum temperature of 120°F. The cabinet has lip load slides on 1-1/2" centers, allowing for a capacity of 27 pans measuring 18" x 26". It is equipped with 5" casters, two of which have brakes. The cabinet is made of aluminum and operates on 120v/60/1-ph with a power consumption of 1440 watts and 12 amps. It is cULus and NSF certified.

The clear polycarbonate door allows for visibility of the contents of the cabinet without losing heat. The removable module makes it easy to clean the cabinet interior and allows for future module upgrades or changes without replacing the entire cabinet body.
There are three holding modules available, all of which feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The proofing module is designed for proofing applications only and has individual analog controls for temperature and humidity levels. The holding module is for heated holding applications and has an analog temperature control and a passive humidity generation system. The combination module can switch between heated holding mode and proofing mode with individual analog controls for temperature and humidity levels.
There are several options and accessories available for the C5™ 1 Series Proofing Cabinet, including a travel latch, 6" casters, a small item shelf, a rear push handle, stainless steel legs, factory left-hand hinging, rear rigid casters, a perimeter bumper, a flush door latch, stainless steel universal slides, and different types of plugs and slides.
The cabinet is equipped with a smooth polymer drip trough with a catch pan, high temperature door-mounted Santoprene gaskets, polymer magnetic pull latches with lever-action release, field reversible double hinged 180° swing hinges with long-life nylon bearings, and extruded aluminum powder coated frame with a .090" polycarbonate window.
