Standard Features: CONSTRUCTION The kettle is constructed from one-piece welded 304 stainless steel for durability. All exposed surfaces are made of stainless steel. The controls are housed in a water resistant IPX6-rated enclosure. The kettle has a reinforced rim with a butterfly-shaped pouring lip for pouring control. The crank tilt handle is located in the right side controls enclosure for easy and precise tilting of the kettle body. The faucet bracket is standard and mounted on the rear of the controls/trunnion enclosure. FINISH The interior of the kettle is polished to a 180 emery grit finish. The exterior is finished to a bright high buff finish, making it easy to clean and maintain its appearance. ASME CODE, AND U.L. LISTING The unit has been ASME shop inspected, stamped, and registered with the National Board for operation up to a maximum working pressure of 50 PSI. It is also UL listed. SANITATION The unit is designed and constructed to meet NSF and known health department and sanitation codes. It is NSF listed. SELF-CONTAINED STEAM SOURCE The kettle has an electrically heated self-contained steam source that provides kettle temperatures ranging from 150°F to approximately 295°F. The 20/24 quart models have a 6 or 8 KW input, while the 40/48 quart model has a 12 or 14 KW input, depending on the kettle voltage. The unit is factory charged with water and rust inhibitors for long life and minimum maintenance. CONTROLS The controls are located in a right-side water resistant (IPX6 rated) trunnion enclosure. The Classic -C Models include a power ON-OFF switch with an indicator light, a temperature control knob with 1 to 10 increments, a HEAT(ing) indicator light, and a LOW WATER warning light. The Advanced -A Models include a power ON-OFF switch with an indicator light, a temperature & time set knob, a HEAT(ing) indicator light, an LED display of set heat level or cook time, buttons for resetting Low Temp and High Temp presets, a MANUAL mode button for knob-setting of heat level, and a TIMER set button with an indicator light. SAFETY SYSTEMS The kettle is equipped with a safety tilt cut-off that cuts off heat when tilted more than 12°, a pressure relief valve, a high limit pressure switch, a low water cut-off, and a 24-v
