The MT-1826-7 Solid Door Mobile Heated Holding Cabinet from FWE is a versatile mobile cabinet that allows users to adjust the temperature and humidity to create the optimal conditions for their food. This ensures maximum holding time while preserving flavor and texture. The cabinet features universal slides that can be adjusted in 1-½" increments, allowing users to maximize storage space. The slides can accommodate 12"x20" and 18"x26" pans.
The humidity can be easily adjusted using a dial that ranges from moist to crisp, depending on the type of food being stored. The temperature can be adjusted between 90°F and 190°F in 10-degree increments. The temperature is easy to monitor with the built-in thermometer, and the control panel is conveniently located at eye-level and recessed to avoid interference. To distribute warm moist air throughout the cabinet, a fan-cooled Hi-Temp blower motor is installed. Moisture is provided by a removable stainless steel water reservoir.
The cabinet is equipped with two separate Incoloy nickel-chromium heating elements to control the temperature and humidity. The door features a magnetic workflow handle for easy opening and a cabinet-mounted door gasket to protect it from damage and maintain a secure seal. The interior of the cabinet is made of 22 gauge stainless steel with coved corners for easy cleaning, while the exterior is constructed of rugged 20 gauge stainless steel with a polished finish.
The cabinet is insulated with high-density UG-26 fiberglass insulation in the sides, top, bottom, and sides to maintain temperature with minimal power consumption. It is also equipped with four 3-½" swivel casters for easy mobility. The cabinet is UL listed, UL EPH classified, and has IPX4 and CE certifications, ensuring it meets high safety and sanitation standards.
