The Steam'N'Hold™ Boilerless Convection Steamer is a countertop electric steamer that can hold three 12" x 20" x 2-1/2" deep pans in each compartment. It features vacuum cooking and manual mechanical timer controls. This steamer does not require any water or drain connections. It has an 11kw power output, operates on 480/60/3ph, and requires 13 amps. The steamer comes with a cord with NEMA L16-20P and is cULus and UL EPH Classified. It is made in the USA and is ENERGY STAR® certified (availability may vary, contact the factory for more information).
Some of the standard features of this steamer include a 90-minute timer, a heavy-duty door, a power on switch, a field reversible door, a 3-gallon water reservoir, a right-hand hinged door, a front-mounted drain valve, and a 5' power cord and plug. It also has a super duty heater configuration, does not require a hood in most areas, and has vacuum and temperature gauges. The steamer has indicator lights for heat, cook, and hold modes, and does not require deliming, descaling, or blowdowns. The heating element is not exposed to water, and there are no water quality exclusions to the warranty. It has low water protection with a light and buzzer, and the door can be opened quickly while cooking. The steamer has fast cook, low temp, steam, and hold modes, and a steam director that covers the water for added safety. It also has a selector switch for fast cook and thermostat modes, and continuous cook and hold mode settings on the timer. The steamer cavity is made of durable reinforced 14 ga. 304 stainless steel. It features exclusive and patented Countertop Convection Steamer low temperature steam cooking mode and Boilerless Countertop Convection Steamer patented vacuum technology for efficiency and faster cooking.
