The S32401D060 DBL Two Steam'N'Hold™ Boilerless Floor Model Steamer from AccuTemp is a dual cavity model that includes two steamers stacked on a stand. Each steamer can hold three 12" x 20" x 2-½” pans, making it a great choice for kitchens with lower demands. These steamers are designed for use with 240v/60/1-ph power at 25.0 amps and produce 6kW of power.
Unlike traditional convection steamers, the Steam'N'Hold™ steamers from AccuTemp do not use fans to circulate air around the cavity. Instead, they use a patented vacuum system that removes the air from the cavity, allowing the steam to make better contact with the food. This vacuum system also allows for cooking with steam at lower temperatures by lowering the pressure inside the cavity, which lowers the boiling point of the water.
Each steamer has a 3-gallon water reservoir that needs to be manually filled. These steamers can use any potable water, and AccuTemp upholds the warranty and lifetime service and support guarantee regardless of the water quality used.
The steamers come on a sturdy stainless steel equipment stand that will last the lifetime of the steamers. Each steamer has its own 5' power cord and L6-30P plug for connection to a power source with its own 30.0 amp breaker.
Standard features of these steamers include a 90-minute timer, heavy-duty door, power on switch, front-mounted drain valve, and no water or drain line required. They also have vacuum and temperature gauges, heat, cook, and hold indicator lights, and no deliming, descaling, or blowdowns required. The heating element is not exposed to water, and there are no water quality exclusions to the warranty. The steamers also have low water protection with a light and buzzer, a quick release door to open while cooking, and various cooking modes such as fast cook, low temp, steam, and hold.
